As a violin teacher I always recommend Wohlfahrt no 58 as a shifting etude

It has a shift almost every beat, it’s not too fast and it’s also not too difficult. The transitions in this violin etude really teach you to know exactly how to combine changes in position with finger changes and string crossings.
